Muffin Recipe I used for the healthy muffins we had on Fitness Friday. I did cut the fat and sugar in half (only using 1/4 c. butter and 1/4 c. of brown sugar). I also used 1/2 c. ground up quick oatmeal instead of oat bran (because that is what I had on hand) and added a few choc. chips. I was able to get 18 muffins out of the batter (compared to the 12 it says). Enjoy!
